Power Muffins!

This is the way I’ve started my day for the past several months. When I run out of muffins, I hardly know what to eat for breakfast! Below is my basic recipe – you can make 12 or 24 and save them in your fridge for a week.

I’ve added a few of my favorite variations too. This recipe is so versatile, you can make up your own flavor combinations by adapting a recipe for regular muffins or cupcakes (e.g. carrot cake, banana nut, coconut, etc). You can also make the recipe into a pancake if you just can’t wait for the oven to warm up!

BASIC MUFFIN BASE (vanilla):
– 2 scoops Vanilla Casein or Casein/Whey blend protein powder (I use Beverly Nutrition UMP)
– 1/2 cup liquid Egg Whites
– 1/2 cup Raw Oats (not quick oats)
– 1/2 cup water
– 1 tsp vanilla extract
**Blend all above in blender
The above makes 6 muffins. Double, Triple, or Quadruple for more!
Bake on 350 F – in a muffin tin sprayed with cooking spray. Cook or until muffins are solid and start to pull away from the tin

CHOCOLATE PEANUT BUTTER
– instead of vanilla protein powder use chocolate flavored
– add to the basic recipe: 2 tbsp. raw cocoa powder + 2 tbsp. Powdered Peanut Butter (or real, if you prefer)

APPLE CINNAMON
– ADD to Basic recipe: 1/4 cup apple sauce, 1/2 chopped apple, 2 tsp. cinnamon
– REMOVE: 1/4 cup of the water

BANANA NUT:
– ADD to basic recipe: 1/2 banana
– REMOVE: 1/4 cup of the water
– Blend, then add 1/8 cup chopped almonds or walnuts
