Eggs Florentine, TheGymCoach style

Traditional egg Florentine is made with ‘mornay’ sauce, which is pretty creamy (fattening). So I came up with this easy and healthy version for lunch today:

Ingredients (per serving):

  • 1 Egg (organic, free range, certified humane.. please!)
  • 1 hand full (organic) spinach
  • Olive oil spray
  • Dried onion
  • 1/2 oz local farm cheddar cheese, sliced
  • 1/2 whole wheat english muffin or slice toast

1. Poach an egg (see how here)

2. Meanwhile, saute  spinach in a non stick pan with a splash of water and dried onions

3. Place english muffin or toast on a plate, and top with poached egg, then sautéed spinach. Top with the sliced cheese

Approximate per svg: 233 Calories, 12g carbs, 9.3g fat, 10g protein (varies depending on bread, cheese choice)

    Can’t go wrong with a good lean, high protein breakfast!! It’s a perfect meal for those who have a healthy and fit lifeystle!! Yum!!
