Healthy Huevos Rancheros

I was craving something from the southwest today and found just the ticket with this GymCoach style Huevos Rancheros. Low Cal, Low Fat, Low Carb, High Protein – and mmm yummy. What more could you want?! Oh and… SUPER easy to make. This is a keeper.

Ingredients

  • 1/2 cup organic black beans, drained
  • 2 eggs (buy humane certified!)
  • 1 oz fat free feta cheese
  • 2 tbs organic salsa of your choice
  • olive oil cooking spray

In a non stick pan, spray a little cooking spray and cook 2 eggs over high heat for 30 seconds, then med high heat until whites are cooked and yolks are soft.

Meanwhile, heat 1/2 cup black beans in microwave safe bowl/plate for 30 seconds. Top with feta cheese and microwave 10 more seconds

Top beans and cheese with the 2 eggs, salsa, and enjoy!!
