Make the most of your workout!
Ever cooked veggies beyond eating texture? I have, and always end up throwing out good food. How about making a soup with those delicious and nutritious veggies? Here’s a new recipe I created over the weekend, and it turned out not only delicious but low in calories and fat too!
Cut up and boil asparagus and broccoli until well cooked (beyond eating mushiness!), drain and set aside. Saute onion and garlic on medium high heat in Earth Balance until onion is glassy. Add vegetable broth and milk, cook 1 minute then set aside. Add pepper, salt, and fresh thyme leaves (remove stem). Combine with the cooked asparagus and broccoli. Put half the mix into a blender and puree until well blended, then repeat with the other half.
Voila! Your soup is ready… you can serve immediate topped with ½ ounce shredded cheese, or store in the fridge and reheat when you are ready.
Calories per serving: 102, 5 grams fat (with the cheese!). Wow!
