Make the most of your workout!
As part of my post vacation ‘cleanse’ I created this vegan curry which is so delicious, you won’t believe it’s good for you! A total of 205 calories, less than 1 gram of fat, 9g protein, and all veggie carbs makes this a great anytime lunch or dinner – and can I mention EASY!
Instructions: Rinse chickpeas. Throw everything in a pan, stir. Cook on med for 10-15 min stirring every so often. Add water if needed. Done!
|1 can chickpea/garbanzo beans|
|2 cups butternut squash cubed (frozen works great)|
|8 oz vegetable broth|
|2 cups cauliflower (frozen)|
|1-2 tbs curry powder|
|1 tbs dried onions|
|1 tsp corriander (or 1-2 tbs fresh chopped)|
|1 tsp white pepper|
|1 tsp cumin|
|1 tsp garlic powder|
|chili powder to taste|
