Almost no fat vegan curry (super duper EASY)

As part of my post vacation ‘cleanse’ I created this vegan curry which is so delicious, you won’t believe it’s good for you! A total of 205 calories, less than 1 gram of fat, 9g protein, and all veggie carbs makes this a great anytime lunch or dinner – and can I mention EASY!

Serves 4

Instructions: Rinse chickpeas. Throw everything in a pan, stir. Cook on med for 10-15 min stirring every so often. Add water if needed. Done!

Ingredients:

1 can chickpea/garbanzo beans
2 cups butternut squash cubed (frozen works great)
crushed tomatoes
8 oz vegetable broth
2 cups cauliflower (frozen)
1-2 tbs curry powder
1 tbs dried onions
1 tsp corriander (or 1-2 tbs fresh chopped)
1 tsp white pepper
1 tsp cumin
1 tsp garlic powder
chili powder to taste
