Spicy Pumpkin Curry soup

The BEST thing about fall is.. SOUP! I absolutely love soup – not just for the healthy hearty warm feeling but the creativity in making new recipes. This one was soooper yummy (get it!?), and hit the spot on a cold rainy day. Not to mention EASY and LOW CAL/FAT. Love it!

Ingredients:

  • 1 can pumpkin puree
  • 4 cups low sodium vegetable broth
  • 1/2 cup 2% milk
  • 2 tbs olive oil
  • 1/2 diced red pepper
  • 1/2 diced yellow onion
  • 4-5 chopped carrots (peeled or unpeeled, your choice)
  • 2 cloves garlic, pressed
  • 2 tbs. curry powder
  • 1 tbs. white pepper
  • 1 tbs. coriander
  • 1 tbs. cumin
  • 1 tsp.  chili powder
  • 1 tsp. clove

Make it (here’s the EASY part!):

  1. In a stock pot, heat the olive oil and add garlic and onion on med-high heat. Cook 2 mins until onion is clear.
  2. Reduce heat to medium; add the broth, pumpkin, and milk – stir and cook for 5 mins
  3. Add the spices, turn heat to medium-low for another 20 minutes
