Green Eggs no ham!
I created a very easy and delicious breakfast this morning – ok it’s not such a ‘creation’ as a super simple twist on ‘green eggs’. With healthy spinach and power packed egg whites, this is a great post-workout or anytime snack!
- 1/3 cup egg whites
- 1/4 cup frozen spinach
- 1 tb chopped shallot
- 1 tsp Earth Balance (or olive oil spray)
- No sodium italian seasoning
In a nonstick pan on med-high heat, heat earth balance butter until melted. Add shallots and frozen spinach – cook for 2 min. Add egg whites and scramble until cooked. Enjoy!
